Lombok’s traditional cuisine is diverse in terms of basic ingredients and seasonings, thanks to its fertile tropical agricultural and the abundant wealth of the sea. All the ingredients in the restaurant will be locally sourced.
Indonesia is known for its rich traditional cuisine which is divided into various tribes and customs. Religiosity is one of the characteristics of Indonesian society, and in every action, they include God. This is also reflected in their eating traditions.
TEPANOAN
As an agricultural area, the culture of its people has been influenced significantly. One tradition is Tepanoan, also known in several other areas of Indonesia, including Central Java, the Special Region of Yogyakarta, and Bali. The tradition various according to the region’s produce and involves eating together before planting and harvesting rice. This usually begins with a prayer to thank God for all the abundant gifts. Farmers hope the rice they plant will yield a bountiful harvest and bring blessings to their families and communities.
Initially, the tradition was dedicated to Dewi Sri, the Goddess of Rice/Fertility. However, with the advent of Islam in Lombok, the Tepanoan tradition changed, now focusing on praying and giving thanks to God Almighty.
The Tepanoan menu consists of a combination of several side dishes and vegetables in a traditional style, confirming that traditional dishes are just as delicious as modern ones.
By preserving Tepanoan, we not only maintain traditional cooking but also the tradition of gratitude.
RAMPAK/BEGIBUNGAN (Rijsttafel)
This dining style is popular among the Sasak tribe in rural areas, both in family settings and special occasions. Daily Begibung meals involve rice placed in a tray and distributed according to portions, while during special events, the rice is placed on individual plates.
Traditionally, Begibung was served on wooden or clay trays, but nowadays, it’s served in other containers with individual plates.
TETAKILAN or PETAKILAN
The unique way of eating has been passed down from generation to generation from the Royal period, the colonial era of Dutch Colonialism, Nipon, until now it can still be found in the interior of the countryside. It applies the Nasi Wrap system, where food wrapped in banana leaves is served with various side dishes and vegetables. Originally intended for workers in the fields and construction to meet their food needs while working, this method has evolved over time and is now known by various names like Nasi Wrap, Nasi Balap, Nasi Kotak, and others.
